Smoked Salmon Blinis with Horseraddish Creme Fraiche

To make the Smoked Salmon Blinis you will need:-

INGREDIENTS: For the blinis

100g/4oz self-raising flour

25g/1oz caster sugar

1 free-range egg

150ml/¼ pint milk For the topping


2 tbsp horseradish sauce

150ml/5fl oz crème fraîche

Turn of freshly ground black pepper

Small handful of chives

100g/4oz sustainably sourced smoked salmon

1 lemon For cooking



1. Mix the horseradish sauce and crème fraîche together in a bowl.

Set aside in the fridge.

2. Place a large circle of Bake-O-Glide onto the simmering plate.

3. Beat together the flour, sugar, freerange egg and milk.

4. Using a dessert spoon, place spoonfuls of the mixture onto the silicone paper to cook. When they start to bubble and look fairly ‘set’, flip them over so you can cook the other side.

5. While the blinis are still a warm, blob on some of the crème fraîche mixture, a small slice of lemon and a slither of smoked salmon. Arrange some of the chives on top of it all to pretty it up.
